Carne cruda in insalata battuta al coltello



Ingredients for 4 people:
300g veal (leg), salt, pepper, 1 lemon, extra-virgin olive oil


Preparation:
Slice the piece of veal, cut each slice into fine strips and then into tiny cubes. Bring the meat pounder down hard against the cubes of meat, add the salt and drizzle with the olive oil and lemon juice and freshly ground black pepper. The most expert chefs use two knives simultaneously to mince the meat.
