Ingredients for 8 people:
200g salted anchovies, 1 bunch of flat-leaf parsley, 1 clove of garlic, 1 whole chilli (optional), 1 glass of olive oil, 1 tablespoon of vinegar, soft centre of 1 small roll
Preparation:
Split the anchovies into fillets carefully removing the spine. Clean off the salt by dipping each one in a small bowl of water and vinegar and then dry. Wash the parsley and remove the stalks keeping only the leaves. Open the clove of garlic and remove the central shoot (the central shoot is particularly pungent). Finely chop the parsley and garlic together. Add the olive oil, the bread soaked in the vinegar and mix together until you have a creamy consistency. Add the whole chilli and place the anchovies in a container or bowl. Pour over the green sauce, making sure they are all fully coated.
