THE COOK: Stefano Sforza, born in 1986, graduated from the Istituto Alberghiero di Lanzo hotel school and began his career with an internship at Ducasse restaurant at age 17. He began working at the Hotel Bellevue in Cogne (1 Michelin star), followed by the Ristorante del Cambio in Turin. Finally Trussardi alla scala and the restaurant Gemma di Rosa at the Relais Bella Rosina. Since May 2015, he has led the kitchen at the restaurant Les Petites Madeleines. His cuisine is a skillful blend of Piedmontese tradition and innovation.
